The word "basil" comes from old Greek and means "royal" because ancient cultures considered basil to be very noble and sacred. Basil's reverence extends to other cultures. In India, basil is cherished. In Italy, it is considered a symbol of love.
Fresh basil should look vibrant and be deep green in color. It should be free from darks spots or yellowing. Fresh basil can be kept for a short time in plastic bags in the refrigerator. For a longer storage, chop, put in ice cube tray, cover with olive oil, place in the freezer. When frozen, place cubes in freezer bag. Dried basil loses most of its flavor.
Usually basil is used fresh in cooked recipes. Cooking quickly destroys basil's flavor so add it at the last moment.
